    Today I made 5 chicken dinners all in one morning! The best part is that I only paid $6.00 for the meat. Because I’m being mindful of our spending, I found a great deal on chicken breasts for .99 a pound at Fred Meyer so I threw the package into the crockpot overnight and got to work in the morning. We are a family of 7, 5 kids and us. We are not huge meat eaters so we can be satisfied with a small amount of meat in our meals.     “There’s a lot of nice places in Mexico” -Oakley These were the words out of the mouth of our son as we stopped for a bathroom break and lunch in Oregon at a lodge I promised myself I’d remember the name. My heart smiled at the thought of the innocence in his comment and the sweetness of his observation. “There’s a lot of nice places in Mexico.” It wasn’t Mexico but it was indeed nice. The lodge was perfectly nestled in a beautiful setting of trees, lakes and streams filled with kayakers and lovers of nature. Old and young, they were finding retreat there.
