Chicken Dinner Ideas

Today I made 5 chicken dinners all in one morning! The best part is that I only paid $6.00 for the meat. Because I’m being mindful of our spending, I found a great deal on chicken breasts for .99 a pound at Fred Meyer so I threw the package into the crockpot overnight and got to work in the morning. We are a family of 7, 5 kids and us. We are not huge meat eaters so we can be satisfied with a small amount of meat in our meals. First step was to shred all of the chicken, watching out for those small little bones. I was surprised at just how much shredded chicken there was.


Many times, I will just split up the chicken, toss it into the freezer to use for easy meals but today I decided to prep some freezer meals. Here is what I made.
MEAL 1- CHICKEN ENCHILLADAS

Layer 1- Green enchilada sauce, layer of chicken(mixed with salsa)
Layer 2- black beans, chicken and cheese.
Layer 3- Green enchilada sauce, cheese and black olives

MEAL 2- BROWN RICE, CHICKEN AND BROCCOLI CASSEROLE



MEAL 3- QUINOA, CHICKEN AND BROCCOLI


MEAL 4– CHICKEN PENNE WITH ALFREDO



MEAL 5 – CHICKEN TORTILLA SOUP
One jar of this tortilla soup from Walmart can be stretched by adding chicken broth, or vegetable broth. Add chicken. I have added beans and corn as well. This is a super easy go to meal that I like to keep on hand.


So good. We had this one for lunch.
